The Superfood Salad: My Take On The “Michigan Salad”

This innocent looking salad packs in a shocking 44% of all your daily vitamin and mineral needs.

With 80% folate and 85% of your daily Vitamin C, you’re pretty much set for a healthy day.

What’s even more incredible is that this 100% vegan salad delivers 45% of your daily Iron, 81% of Magnesium, and 191% of Manganese.  Oh, yeah… and 17 grams of plant-powered protein.  Who needs meat for iron? PLUS, Vitamin C helps your body absorb the most amount of Iron which is awesome.

If you still aren’t convinced, this beautifully colored salad has 81% of omega-3’s. You know – the stuff that makes your brain function optimally and can act as a natural anti-depressant.  Most people think you have to take fish oil supplements or eat salmon every night to get the right amount of Omega-3’s, but that’s just not true!

SO… WTF is a superfood?

A superfood is a regular food with an unusually high amount of nutrients per calorie. The Goji Berries pack 250% of daily Vitamin C in one serving, and organic shelled hemp seeds provide protein and tons of omega-3’s.  Coconut Butter is just freaking delicious and smells like tropical paradise (okay – and it also has amazing fats for your skin and hair) so that’s enough in my book to call it a superfood.  I also added quinoa which has iron, magnesium, manganese, and lots of plant protein.

Melting this over the stove top to make candied pecans for the salad makes the house smell like Hawaii.  

Also, i’m ridiculously in love with their slogan.

So I took out the three juiciest, ripest strawberries I could find along with grapes, and blueberries and combined them with my superfoods to create this amazingly delicious summer salad.

Recipe:

  • 2 cups (at least) of romaine or your favorite leafy green
  • 1/2 cup-3/4 cup cooked quinoa
  • Strawberries, blueberries, grapes
  • 1-2 tbsp hemp seeds
  • 2 tbsp+ goji berries
  • 1-2 tbsp pecans (or walnuts)
  • Strawberry Poppyseed dressing

So good and so healthy it’s almost a crime.
